No stacking collapse has no benefit while stacking bleed increases damage and refreshes all the stacks. Bleed eventually outperforms collapse on high attack speed survivors. Needletick is an unfun mechanic at best and a disgustingly unfair one at worst. Dodge all you want, everyone gets hit occasionally. No one's perfect. Unless you get snuck up on by an overloading elder lemurian/brass contraption, no other regular enemy can simply straight up 1-shot you from 100% hp. And at least you can quick identify them ...
